Beet, Cabbage & Apple Salad

Ingredients

1 bunch
beets, cleaned and shredded
1
red cabbage, shredded in food processor
4
Granny Smith Apples, chopped
1
lemon, juiced
1 cup
chopped walnuts
1⁄2 cup
minced figs

Instructions

Toast chopped walnuts and set aside to cool slightly.

Toss the chopped apples with lemon juice so they don’t oxidize, and set aside. 

Combine beets and cabbage in a large bowl then add all the other ingredients.

Serve with Boiled Cider Dressing and toss well. (Recipe♦181)
