Black Bean Fiesta Salad (No Corn)

Ingredients

black or Spanish beans (drained and rinsed)
1 cup
sprouted mung beans

red pepper (finely chopped)

yellow pepper (finely chopped)
1⁄2 cup
red onion (chopped)

fresh cilantro (chopped)

fresh parsley (chopped)
1
fresh chives (chopped)
3 cloves
garlic (smashed and diced)
2 tablespoons
olive oil

lime (juiced)
 
salt (to taste)

Instructions

Combine all ingredients together. Can be served with 1-2 tablespoons plain Greek yoghurt. Optional: Add hot sauce to taste.
