Cilantro Flavor Balm

Ingredients

head of garlic (peeled)
1⁄2 bunch
cilantro (most stems removed, coarsely chopped)
1
lemon (juiced)
1⁄4 cup
red onion (coarsely chopped)
1 can
artichoke hearts (drained)

Instructions

Pulse the garlic in the food processor until minced. Add the rest of the ingredients and pulse so you don’t create mush. Add a dollop of this to brighten up soups and stews. Or use it on plain roasted chicken, a vegan bean dish, etc. Having this flavor boost on the side is especially helpful when there are people who love and hate cilantro at the same meeting.  (Recipe♦290)
