Paleo Bok Choy Salad

Ingredients

baby bok choy (cleaned and sliced thin on diagonal)

celery stalks (cleaned and sliced thin on diagonal)
1⁄2 cup
olive oil
1⁄4 cup
fresh lime juice
 
Dressing:
1 teaspoon
mustard
1 teaspoon
fresh grated ginger (more to taste)
1 teaspoon
honey or permitted sweetener
 
salt (to taste)
1⁄2 cup
toasted almonds, walnuts or pumpkin seeds (for garnish)

Instructions

Mix the bok choy and celery in a bowl. Whisk together dressing ingredients in a separate bowl, and combine with vegetables. Garnish with nuts or seeds.  (Recipe♦604)
