Red & Green Tomato Salsa 2

Ingredients

red tomatoes

green tomatoes

cucumber

green pepper

poblano green pepper
1 bunch
fresh parsley (remove stems)

shallots (minced)
1 clove
garlic (minced)
1 1⁄2
piece of fresh ginger (grated)
1⁄4 cup
olive oil
1⁄4 cup
white balsamic vinegar
1
ume plum or apple cider vinegar

Instructions

Chop the tomatoes, cucumber, peppers and parsley, and combine in a bowl. Add the shallot, garlic and ginger, and mix into the salad. Whisk or blend the olive oil and the vinegars. Coat salad and blend well. Adjust seasonings and/or vinegars to taste.  (Recipe #703)
