Red Slaw with Spicy Pumpkin Seeds

Ingredients

1
head of red cabbage
2
lemons (juiced)
 
olive oil (equal to the amount of lemon juice)
 
salt and pepper (to taste)
1 cup
dry roasted spicy pumpkin seeds (we used Eden Organic)

Instructions

Whisk together the lemon juice, olive oil, salt and pepper to make the dressing. Finely shred the cabbage in a processor, and mix with the pumpkin seeds. Toss the salad with the dressing, and let sit for at least ten minutes before serving. If you can’t find spicy pumpkin seeds, you can use chopped almonds and add a little heat in the form of a few shakes of hot sauces or cayenne pepper.  (Recipe #713)
