Sprouted Lentil Salad

Ingredients

2 cups
sprouted lentils (or crunchy sprout mix)
1
cucumber (diced small)
1 package
grape tomatoes (halved)
1⁄4 cup
minced red onion
1⁄2 cup
sunchokes (diced)
1⁄4 bunch
fresh cilantro (chopped)
2 tablespoons
olive oil
2 tablespoons
lemon juice
1 tablespoon
white balsamic or other light vinegar
2 teaspoons
mixed italian seasonings
 
salt and pepper (to taste)
2
dates or a few drops of stevia (optional)
Yields:

Instructions

Combine the lentils with the diced/chopped vegetables and cilantro. Whisk together remaining ingredients for the dressing. If you use the dates, blend dressing in a food processor. Toss salad with dressing and serve.  (Recipe #793)
