Peel carrots and beets and shred all ingredients in a food processor. If you don't have a food processor, grate or slice very thinly by hand. Drizzle with vinaigrette dressing, toss and serve.
Variations: Suppers slaw can be varied endlessly. Try adding fresh herbs such as cilantro, mint, or basil. Add different low carb shredded vegetables: greens, kale, broccoli stems, daikon radish, bok choy. Add fruit: apples, pears, berries. Top with toasted slivered almonds, pumpkin seeds or crumbled goat cheese or feta.
