1serving of Aioli Mayo (see link below for recipe)
3 cupsshredded carrots (from about 1 lb)
1 cupfinely chopped celery
1⁄4 cupchopped yellow onion
Shred carrots in food processor. Place the Aioli Mayo, shredded carrots, chopped celery, and chopped onion in mixing bowl. Mix well. Place in romaine lettuce leaves as sandwiches.
