Aloo Gobi (Cauliflower & Potato)

Ingredients

head cauliflower, cut into 1-inch florets

red potatoes, cut into 1-inch pieces

tomatoes, diced
1
red onion, chopped
1⁄2
inch ginger, grated
2 tablespoons
olive oil
1 teaspoon
cumin seeds
1
bay leaf
1⁄4 cup
cilantro leaves, chopped
1 teaspoon
salt

Instructions

In a large skillet, heat oil and when hot, add bay leaf, cumin seeds, and saute until golden. Add onion, ginger, and cook for 3-4 minutes. Add tomatoes, potatoes and cauliflower, cooking until soft, but making sure they do not fall apart into small pieces. Add salt to taste and top with chopped cilantro. Serve with hot rice and dal (red lentils).
