Apple Salsa

Ingredients

1 cup
sliced, roasted almonds
1 cup
golden raisins
1 cup
pomegranate seeds
5
tart apples (Jonathan, Pink Lady, or Stayman-Winesap. Leave skin on)
1⁄2 bunch
parsley (chopped)
 
lime juice (from 1 lime)
3 tablespoons
coconut milk
1⁄4 teaspoon
cardamom (or to taste)
1⁄2 teaspoon
cumin (or to taste)

Instructions

Chop apples into 1/2 inch pieces. Add chopped parsley, pomegranate seeds, raisins, and almonds. Add lime juice and coconut milk. Sprinkle with cardamom and cumin and combine well. Adjust spices to taste.  (Recipeā™¦130)
