Avocado & Carrot Soup

carrots (coarsely chopped)

piece of fresh ginger (chopped)
3 cups
water (more if needed)

lemons (juiced)
1⁄4 teaspoon
cayenne pepper
 
salt and pepper
1 teaspoon
curry powder (optional)

Instructions

Process all ingredients in a Vitamix or similar high power blender until creamy. (You may have to do this in two batches.) Taste and adjust seasoning.
