Avocado, Coconut Milk & Lime Ice Cream


1 can
full fat coconut milk (refrigerated)
avocados (previously peeled and pitted, then cubed and frozen)
1⁄2 cup
lime juice (from about 5 limes)
1 tablespoon
lime zest
1 tablespoon
vanilla extract
10 drops
liquid stevia (more to taste, up to 20 drops)
1⁄4 cup


Place all ingredients into a blender or food processor and blend until smooth. Scrape down the sides a few times to get a smooth texture.Keep in freezer until ready to serve. Best to serve same day as made.
