Avocado Pomegranate Seed Salsa

Serve with slices of turkey or vegan black beans

Ingredients

Granny Smith Apples (chopped for salsa)
2
limes (juiced)
1 cup
pomegranate seeds
2
avocados
1 drizzle
oil (your choice)
 
salt (to taste)
1 teaspoon
freshly grated ginger (optional)
2 tablespoons
cilantro (chopped, optional)

Instructions

As you are chopping the apples, toss with half the lime juice to prevent browning. Mix the chopped apples with the pomegranate seeds in a serving bowl. Peel and chop the avocado, toss with the remaining lime juice to prevent bowning. Combine with the apple mixture and drizzle on a little oil and salt to taste. If desired, add the optional ginger and cilantro.
