3 tablespoonslime juice (to prevent browning)
3 teaspoonsfresh grated ginger (more to taste)
1⁄2 bunchparsley or cilantro (finely chopped)
Dice the avocados and toss with lime juice to prevent browning. Toss with cucumbers, ginger, herb of choice and salt. Add a drizzle of olive oil and a drizzle of honey (or permitted sweetener) if you want a sweet note.
