Avocado & Tomato Salsa

If you would like to make a lower carb version of this delicious and flavorful salsa, replace the orange juice with lemon juice.

Ingredients

avocados (chopped and processed with S blade to resemble grain)

green tomatoes (large size, diced)

red tomatoes (large size, diced)
1
jalapeno pepper (seeded and minced)
3 slices
fresh ginger (minced, use more if desired)
1⁄2 bunch
cilantro (chopped)
1
orange (juiced)
1⁄4 cup
apple cider vinegar
 
salt (to taste)

Instructions

Prepare all the vegetables and herbs as directed and place in a bowl. Drizzle the salsa with orange juice and vinegar, add a pinch of salt and toss. Serve immediately.
