Banana Salsa

Ingredients

bananas (large, not too ripe)

red bell pepper (seeded and diced)

orange pepper (seeded and diced)

yellow pepper (seeded and diced)
1⁄4 cup
fresh cilantro (chopped)

green onions (chopped finely)

lime (juiced)

lemon (juiced)
1 tablespoon
coconut crystals (or brown sugar)
1 tablespoon
fresh ginger (grated)
1 tablespoon
olive oil
1 tablespoon
habanero pepper (minced; or hot sauce, to taste)
 
salt (to taste)

Instructions

Place the chopped vegetables in a large bowl. Whisk together the juices, coconut crystals, ginger, olive oil, pepper/hot sauce and salt, and toss well. Just before serving, peel and dice the bananas and toss in.
