Beet, Cabbage & Apple Salad

Ingredients

1 bunch
beets (cleaned and shredded)
1
red cabbage (shredded in food processor)

Granny Smith Apples (chopped)
1
lemon (juiced)
1 cup
walnuts (chopped)
1⁄2 cup
figs (minced)

Instructions

Combine beets and cabbage in a large bowl. Toss the chopped apples with lemon juice so they don’t oxidize. Toast chopped walnuts, let cool slightly, and combine all ingredients. Serve with Boiled Cider Dressing and toss well.
