1 bunchbeets (cleaned and shredded)
1red cabbage (shredded in food processor)
4Granny Smith Apples (chopped)
1 cupwalnuts (chopped)
1⁄2 cupfigs (minced)
Combine beets and cabbage in a large bowl. Toss the chopped apples with lemon juice so they don’t oxidize. Toast chopped walnuts, let cool slightly, and combine all ingredients. Serve with Boiled Cider Dressing and toss well.
