Beet Nori Rolls

For when you're doing Whole30 during the Superbowl. Try these raw, vegan Nori rolls and pass on the wings, chips, and pizza.

Ingredients

sheets organic Nori (seaweed sheets)
2
raw, peeled, riced beets (or riced cauliflower)
1
cucumber (peeled and sliced into long strips)
1
avocado (cut into long slices)

Instructions

Lay a single sheet of nori on a dry surface with the shiny side down and seams running away from you. Spread a THIN layer of the beet rice. Leave an inch or two margin at the edge far from you. Lay the long strips of cucumber and avocado on the end close to you. Roll the nori and rice around the cucumber and avocado. Wet your finger and wipe the last margin to help "glue" the nori closed. Using a sharp knife to cut the roll in to six small rolls. Repeat.
