Blanched Broccoli Salad

Ingredients

head broccoli
1
small red onion (minced)
1⁄4 cup
roasted pumpkin seeds
3 tablespoons
olive oil
2 tablespoons
white wine vinegar
2 cloves
garlic
2 drops
stevia
 
salt (to taste, if permitted)

Instructions

Boil a pot of water. Plunge the broccoli head in for 30-40 seconds, remove and drain. Chop into bite-sized pieces. Combine with onion and pumpkin seeds. Whisk together the oil, vinegar, garlic, Stevia and salt (optional), and toss with the salad. Chill or serve.
