1butternut squash, washed, seeded, and shredded
1⁄4 cupraisins or currents
1 tablespoongrated fresh ginger
1 tablespoonolive oil
2 tablespoonslight vinegar
Wash, peel, seed, and shred butternut squash in a food processor. Grate ginger. In a large bowl, combine squash with raisins/currents. Whisk together oil, vinegar, ginger, salt and pepper. Combine and serve within one day.
