Butternut Squash Salad

Ingredients

butternut squash, washed, seeded, and shredded
1⁄4 cup
raisins or currents
1 tablespoon
grated fresh ginger
1 teaspoon
salt
1 tablespoon
olive oil
2 tablespoons
light vinegar

Instructions

Wash, peel, seed, and shred butternut squash in a food processor. Grate ginger. In a large bowl, combine squash with raisins/currents. Whisk together oil, vinegar, ginger, salt and pepper. Combine and serve within one day.
