1 tablespoonfresh ginger (grated)
1fresh parsley (chopped)
1light vinegar (such as coconut or apple cider vinegar )
1⁄4 cupolive oil
1 teaspoonhoney or agave (more if needed)
Mix the carrots, ginger, pomegranate seeds and parsley in a salad bowl. Blend or whisk together the remaining ingredients. Combine dressing and carrot mixture.
