Carrot Ginger Pomegranate Salad

fresh ginger (grated)

pomegranate (seeded)

fresh parsley (chopped)

lime (juiced)

light vinegar (such as coconut or apple cider vinegar )

olive oil
 
salt (to taste)
1 teaspoon
honey or agave (more if needed)

Instructions

Mix the carrots, ginger, pomegranate seeds and parsley in a salad bowl. Blend or whisk together the remaining ingredients. Combine dressing and carrot mixture.
