Celery Root "Pasta" with Pesto and Radicchio

Celery Root (sometimes called Celeriac) makes a fresh, healthy and gluten-free alternative to pasta.

olive oil
1 tablespoon
pesto (store bought or see recipe link below in instructions)


Using a large knife, trim the dirt and skin off the celery root: (1) First, cut off the top and bottom so you have a level surface to rest the root on. (2) Then working downward, slice the skin off like you are cutting the skin off of a pineapple.  This may take six to eight cuts on the bottom, turning the root over for another six to eight slices.Spiralize the root into spaghetti-sized noodles.  Shred the radicchio.Preheat pan over medium heat.  Add the olive oil and celery root.  Cook 5 minutes covered, stirring occasionally.  Add the radicchio and cook until wilted, 2-3 minutes.  Stir in the pesto and serve.
