Chicken Chili Lime Meatballs

Ingredients

1 pound
ground chicken
2 tablespoons
flax meal
2 tablespoons
almond flour or meal
2
scallions (finely chopped)
1⁄2
medium red pepper (seeded and finely chopped)
2 tablespoons
chopped cilantro
1⁄2 teaspoon
garlic powder
1⁄2 teaspoon
salt
1⁄2 teaspoon
red pepper flakes
 
juice and zest from 1/2 medium lime

Instructions

Preheat oven to 350°F.                                                                                                                                                                       

Combine all ingredients in a large bowl and mix gently until combined.                                                                                                                                                                    Form into balls using a heaping tablespoon of mixture and place on parchment-lined baking sheet. Bake for 18 - 20 minutes or until they reach an internal temperature of 165°F.
