Chilled Avocado Cucumber Soup

Ingredients

limes (juiced)

avocados
2 pounds
cucumbers
1 teaspoon
salt (good-quality, like Himalayan)
1 1⁄2 cup
very cold water (can use part ice cubes)
1
jalapeno pepper (chopped)
1
tomato (chopped)
1⁄2 bunch
fresh cilantro (chopped fine)
1⁄4 cup
minced red onion
 
cracked pepper or hot sauce

Instructions

In a food processor or high-speed blender, blend the first six ingredients until creamy. Taste and add more salt if desired, then chill. Garnish with chopped tomato, onion and cilantro and a few grindings of black pepper or a drizzle of hot sauce, then serve.
