Chilled Cucumber & Mango Soup

This recipe calls for frozen mango and cucumber pieces, so you may need to prep a day ahead.

Ingredients

mangoes (cut into chunks and frozen; or one bag frozen mango chunks)

cucumbers (peeled, sliced and frozen)

mint leaves (plus additional sprigs for garnish)

limes (juiced)
1 pinch
cayenne pepper (or dash of hot sauce, enough to taste a little heat )
1 pinch
salt (high quality such as Himalayan or Celtic Sea)
1 cup
water (or enough to make a thick soup)

Instructions

Process all ingredients in a high speed blender, adding just enough water to make a thick soup. Taste and adjust seasoning before serving. You want a refreshing note of mint and a little bite from the cayenne pepper or hot sauce. Garnish with fresh mint sprigs.
