Chix Stix

This is a great recipe for kids to make. Our ADHD kids (down to six years old!) can make this with a little adult help.

Ingredients

orange (juiced, use lemon juice for low carb version)
1⁄4 cup
tamari (divided)
1 package
chicken breasts (about a pound)
 
skewers (if wooden, soak in water first for 20 minutes)
1 cup
peanut butter (or almond butter)
2 tablespoons
rice vinegar (or cider vinegar)
  drop
hot sauce (or to taste)
1 teaspoon
toasted sesame oil
 
hot water

Instructions

Slice the chicken in long pieces. Juice the orange and mix with 2 TBS tamari. Marinate the chicken in the orange juice and tamari, in the refrigerator, for a half hour or so. Thread the chicken onto the skewers. Broil just a few minutes on each side until the chicken is just done.

For the sauce, blend together the remaining ingredients and stir in just enough water to get the desired consistency for pouring or dipping.

For variations to the sauce, add any of the following: 
• 2 cloves minced garlic 
• 1" piece minced ginger 
• 1 handful chopped cilantro 
• 2 teaspoons honey, if sweetening is allowed on your diet
