4oranges (peeled, seeded and cut into small cubes)
1⁄2 bunchfresh cilantro (chopped fine)
1fresh ginger (1-inch piece, grated fine)
1jalapeno pepper (seeded and chopped fine)
Combine all ingredients together in a glass bowl. We used a pinch of salt and a fair amount of freshly ground black pepper. This goes well as a side to broiled chicken, fish or black beans.
