Crunchy Bok Choy Ginger Salad

Ingredients

1 bunch
bok choy
1 cup
Daikon radish (shredded )
1 tablespoon
salt
1⁄2 cup
slivered sweet peppers (any combo of red, orange or yellow)
1⁄4 cup
finely chopped scallion (f)
 
1" fresh ginger (grated)
2 tablespoons
chopped fresh cilantro
2 tablespoons
chopped fresh mint
3 tablespoons
rice vinegar
2 teaspoons
honey
 
pepper to taste

Instructions

Thinly slice bok choy stems and leaves. Toss with shredded radish and salt and place in a colander for about ½ hour, in order to wilt the vegetables.

Rinse, drain and squeeze out the excess liquid from the mixture. Pat dry with paper towels or a clean cotton towel.

Toss with remaining ingredients and chill before serving.  (Recipe♦336)
