Cucumber Salsa


large cucumbers (peeled or unpeeled*, diced)
1⁄4 cup
red onion (minced)
1⁄2 bunch
fresh cilantro (chopped)
6 drops
stevia (or to taste)
3 teaspoons
toasted sesame oil
3 tablespoons
fresh lime juice
2 tablespoons
fresh ginger (grated)
2 tablespoons
jalapeno pepper (minced; optional)

Additional Notes

* To decide if you should peel a cucumber, taste it. If it’s bitter, peel it. If it’s waxed, peel it. Ideally you’ll have fresh, organic cukes that don’t need peeling unless for digestive reasons you want to do so.


Combine the cucumbers, onion, jalapeno (if using) and cilantro in a bowl. Whisk together Stevia, sesame oil, lime juice and grated ginger. Toss with salsa ingredients. (Recipe #341)
