Egg & Avocado Salad 2

Ingredients

eggs (hard boiled and chopped)

avocados
1
small red onion (minced)
1 bunch
fresh cilantro (finely chopped)
1
lemon (juiced)
3 tablespoons
olive oil
3 tablespoons
white balsamic vinegar
1⁄2 teaspoon
cumin
 
salt and pepper (to taste)

Instructions

Boil eggs and cool before peeling. Chop eggs. Scoop out avocado flesh and add to the eggs. Add onion and cilantro. Mix well. Combine the last five ingredients for dressing and whisk well. Add to egg mixture and adjust dressing and spices to taste and consistency desired.
