Egg & Avocado Salad 3

Ingredients

hard-boiled eggs
2
avocados (peeled and diced)
2 tablespoons
red onion (minced)
3 tablespoons
parsley or dill (or favorite herbs)
1
lemon (juiced)
1⁄4 cup
olive oil
 
salt and pepper (to taste)
Yields:
large servings

Instructions

Sprinkle some lemon juice on the avocado to keep it from browning while you prepare the rest.  Combine the lemon juice, olive oil, salt and pepper to make the dressing.  Mash the eggs and add the dressing. Fold in the avocado, onion and herbs, and serve.
