Fennel Slaw

Ingredients

large fennel bulb (or two small ones)

red peppers

carrots

cucumber

Daikon radish (3-inch piece)
1
small red onion
1 bunch
fresh parsley (chopped)
1 cup
mung beans (or other sprouts)
1⁄4 cup
sesame seeds (toasted)
1⁄4 cup
sunflowers seeds (toasted)
1⁄4 cup
slivered almonds (toasted)

Instructions

Julienne all vegetables (first six ingredients) using a food processor OR slice very thin with a sharp knife. Combine vegetables with remaining ingredients. Toss with Lemon Garlic Dressing and serve. Optional: Add 1 bunch Swiss chard or kale, rolled and sliced thinly into ribbons OR 1 bunch/bag of spinach, thinly sliced.
