Gina's Vegan Lentil Burgers

Ingredients

8
carrots (shredded in food processor)
2
sweet onions (shredded in food processor)
1 pound
dry lentils (cooked until soft, then drained)
8 cloves
garlic (minced)
1
sweet potato (cooked, then mashed up)
1 cup
salsa
 
salt and pepper to taste
 
garlic powder to taste
 
olive oil to coat pan

Instructions

Preheat oven to 350 degrees. Combine all ingredients and form into patties. Bake on a cookie sheet for about 20 minutes. Carefully flip over the patties and cook an additional 20-30 minutes.                                                                                                  These burgers make a delicious and protein-rich salad topping:  Place mixed greens, shredded carrots and sliced bella mushrooms in a bowl and dress as you wish. Chop or crumble 1-2 patties on top of the salad for a nice crunch.  (Recipe♦432)
