Remove the pomegranate seeds and pick out the hard white bits. You can slice it and poke the seeds out. Shred the cabbage and beets in a food processor. When this is done, switch to the S blade of the food processor and process the dressing ingredients (oil through garlic).
Combine the vegetables and seeds, and toss with the dressing. If it doesn’t have the right balance of flavors, it usually needs a little more salt, lemon juice or sweet note like stevia. (Recipe #444)
