Jicama Salsa

Ingredients

2 cups
peeled and diced jicama
1
red onion (small sized, chopped)
1
red pepper (chopped)
1 cup
fresh parsley (or cilantro, minced)
1
orange (chopped, or lemon for lower carb option)
 
olive oil
 
white vinegar
 
salt and pepper (to taste)

Instructions

Mix the vegetables, herbs with the orange/lemon. Toss with the olive oil, vinegar, salt and pepper.
