Chop the kale and place it in a large bowl. To rub it, sprinkle on 1/2 to one teaspoon of coarse salt. Lift and rub the kale through your fingers for one minute until the color comes up bright green.
Whisk the lemon juice, lemon zest and olive oil to make a dressing.
Fold the remaining ingredients into the kale, and toss the salad with the dressing. (Recipe #506)
