Late Summer Green Salsa

Ingredients

tomatillos (peeled and boiled, then iced)

small red onion (finely chopped)
2 cloves
garlic (minced)
1
jalapeno pepper (minced)
1⁄2 cup
chopped fresh cilantro
1⁄4 cup
chopped fresh spearmint
2
avocados (diced)
1
additional avocado
2
limes (juiced)
 
salt and pepper (to taste)

Instructions

Dice the chilled tomatillos and capture their juices. Combine with the next six ingredients.Blend the third avocado with the lime juice and captured juices from the tomatillos, and combine this dressing with the above mixture.
