Lentil Dahl with Tofu

Ingredients

2 tablespoons
olive oil
1⁄2
red onion (minced)
2 cloves
garlic (minced)
1
piece of ginger (minced)
1 cup
lentils (cooked)
3
plum tomatoes (diced)
1 tablespoon
ground coriander
1 tablespoon
ground cumin
 
salt and pepper (to taste)
1
firm or extra firm tofu (diced)
1⁄2 bunch
cilantro (minced)

Instructions

In a large saute pan, heat the oil. Add the onion, garlic and ginger and saute until the onion is translucent. Add the lentils, tomatoes, coriander, cumin, salt and pepper. Mix well to combine. Let simmer for 5 minutes. Add the tofu and cook for another 2 to 3 minutes. Garnish with cilantro.
