Lentil & Red Pepper Soup

Ingredients

 
olive oil or prefered fat (to coat the pan)

onion (minced)
1
red pepper (chopped)
2
carrots (chopped)
2
stalks of celery (chopped)
1 pound
green lentils (cooked according to package directions)
4 cups
vegetable broth (more if needed)
 
hot sauce (to taste)
 
salt and pepper (to taste)

Instructions

Generously coat the bottom of a soup pot with olive oil or preferred fat. Add the onion and other vegetables, and cook until the onion is slightly browned. Add the cooked lentils and broth and simmer for 20 minutes or so. Season with hot sauce, plus salt and pepper, to taste.
