Ingredients
1 pound
ground lamb, pork, or beef (*See Note) 2 cups
prepared lentils 1
egg (beaten) 1⁄2 cup
olives (chopped)Additional Notes
*Note: grass-fed lamb contributes less than 1/10th greenhouse gases to traditional ground beef
Instructions
Preheat the oven to 375 degrees. Mix the meat, lentils, olives, and eggs, Use a tablespoon or icecream scoop coated in olive oil to make uniform meatballs. Bake for 30-40 minutes.
