Mashed Cauliflower

Ingredients

heads of cauliflower (washed and cut into large pieces)
2 tablespoons
olive oil or coconut oil
1⁄2 teaspoon
sea salt
 
black pepper (to taste)
4 cloves
garlic (smashed; optional)
4
carrots (chopped; optional)

Instructions

Steam the cauliflower pieces until very tender. It's optional to add garlic cloves and carrots into your pot to steam.Puree cauliflower (and garlic and carrots, if including) in a food processor, or simply mash with a potato masher or hand blender. Add in oil, salt and pepper.Reheat in a casserole dish in the oven at 350 degrees for 20 minutes.
