8baby bok choy (cleaned and sliced thin on diagonal)
8celery stalks (cleaned and sliced thin on diagonal)
1⁄2 cupolive oil
1⁄4 cupfresh lime juice
1 teaspoonfresh grated ginger (more to taste)
1 teaspoonhoney or permitted sweetener
1⁄2 cuptoasted almonds, walnuts or pumpkin seeds
Mix the bok choy and celery in a bowl. Whisk together dressing ingredients (oil, lime juice, mustard, ginger, honey and salt) and combine with vegetables. If nuts or seeds are permitted, add as garnish.
