3pluots (if using plums instead, use 4 firm ones) (chopped)
1orange or red bell pepper (chopped)
1⁄3 bunchfresh cilantro (chopped)
1 tablespoonolive oil
3⁄4piece of ginger (finely grated)
Combine the pluots/plums, peppers, cilantro and pomegranate seeds. Blend with remaining ingredients, making sure the ginger is well distributed. Serve with grilled meats or to garnish a bean stew.
