Peel the tough bottoms off the asparagus to reveal the delicious prebiotic fibers. Wrap tall, thin strips of prosciutto around the asparagus like a candy-cane strip. Completely cover asparagus.
Over medium heat, warm the oil in a large skillet. Working in batches so that all the asparagus lie flat, saute for 2 - 3 minutes until the prosciutto is crispy. Serve immediately. (Recipe #650)
