Protein Pancake

Ingredients

1⁄3 cup
uncooked rolled oats (old fashion style)
1
egg
2
egg whites
1⁄2 teaspoon
vanilla extract
1⁄2 teaspoon
cinnamon
1⁄4 teaspoon
ginger
1⁄4 teaspoon
stevia
1
chopped walnuts
1 pinch
crushed red pepper (optional)
1⁄2 cup
blueberries or blackberries
 
oil of choice (enough to coat pan)

Additional Notes

3 whole eggs can be used instead 1 whole egg and 2 egg whites.

Instructions

Mix oatmeal with eggs and add remaining ingredients to taste. Let sit for five minutes, if you have time, for oatmeal to absorb the egg liquid (this step is not essential but makes for a more pancake-like final result).

Heat small fry pan or omelet pan and add oil to coat bottom. Pour pancake mixture into pan, and cook on one side uncovered until bottom is browned, about 3 to 5 minutes. Flip pancake over and cook for a few more minutes until other side is browned.  (Recipe #651)
