Raw Beet, Carrot & Citrus Slaw

In the bleak mid-winter, we often need something to brighten our plates. Fortunately, beets are still in season!

Ingredients

beets
6
carrots (mixed colors are fun, but not necessity)
1
parsnip
3
citrus fruits (orange, grapefruit, or tangerine, etc)
 
citrus vinaigrette (*see recipe link below)

Instructions

Peel root vegetables. Using a spiralizer, mandolin, or food processor, finely shred the roots. Peel and segment the citrus fruit. Cut larger segments into bite-sized pieces. Toss roots, citrus, and vinaigrette together. Serve.
