Raw Chocolate Mousse

Ingredients

1⁄2 cup
water
2 cups
almond milk
1⁄4 cup
dates (finely chopped and packed)
1⁄3 cup
agave nectar
1⁄4 cup
cocoa powder (PLUS 2 TABLESPOONS)
2 teaspoons
vanilla
1⁄8 teaspoon
salt
2 tablespoons
lecithin
1⁄2 cup
raw unscented coconut butter

Instructions

In a blender, blend together water, almond milk, dates, agave nectar, vanilla, salt and cocoa powder until very smooth. Add lecithin and coconut butter until well incorporated. Pour into individual ramekins or small bowls and place in refrigerator or freezer until set (about half hour).
