Sauteed Kale

Ingredients

2 tablespoons
sunflower seed, olive or vegetable oil
3 bunches
kale (or 1 bag pre-cut)
1
yellow onion, thinly sliced
2 cloves
garlic
1 teaspoon
pure maple syrup
1 teaspoon
red pepper flakes
4 tablespoons
water
2 tablespoons
apple cider vinegar
 
sea salt and freshly ground pepper to taste

Instructions

In a small bowl mix together water, maple syrup, red pepper flakes, vinegar. Wash greens and blot lightly with a paper towel. Remove stems from larger leaves if you prefer. Stack 1/2 the leaves together, roll up into a log and slice into 1 inch sections.

In a large skillet, heat oil over medium heat. Add onion and cook until translucent, stirring occasionally. Add garlic and cook until fragrant. Add greens. Saute for 3 to 5 minutes. Add liquid mixture. (Optional: add 4 slices of canadian bacon, microwaved and diced into small bits.) Cook until desired tenderness is reached. Add sea salt and fresh ground black pepper to taste.  (Recipe #754)
