3celery stalks (chopped)
1⁄2 cuppitted dried dates (chopped)
3 tablespoonslemon juice
1 tablespoonolive oil
1⁄4 teaspoonsea salt
1⁄4 teaspoonblack pepper
Mix dates, lemon juice, oil, salt and pepper in a large bowl. Stir in chopped celery.
Shred the beets using spiralizer or food processor, and gently stir them into the mixture. Garnish with celery leaves and serve.
